What was my initial objective?
I had to opt for a low-carb diet for the first few weeks to kick start my journey towards zero diabetes and zero insulin resistance.
To understand a low-carb diet, let's discuss carbs first.
Carbohydrates are whole grains that are full of fiber and starches.
Starches are digested into glucose and absorbed by the blood and fibers present here keep the process of digestion at a good level and facilitate slow absorption of glucose into the blood.
This keeps blood glucose levels at a good point.
When we eat refined or processed carbs that have most of the fibers removed, they cause faster glucose absorption resulting in glucose spikes and increasing the chances of insulin resistance.
That is why whole grains are recommended for healthy eating habits.
